HIGHLAND  PARK WHISKY

Founded in 1798 by Magnus F.unson, but not actually licensed until 1825, Highland Park distillery overlooks Orkney's principal town, Kirkwall. Eunson, an elder of the kirk, was said to have hidden his early contraband spirit under the pulpit! In 1888 James Grant (of The Glenlivet Distillery) bought Highland Park and later his family sold their interests to Highland Distilleries in 1937.

 HIGHLAND PARH whisky has enjoyed a high reputation for many years.

HIGHLAND  PARK WHISKY

 In 1883 it was served to the Emperor of Russia and the King of Denmark and was 'pronounced by all to be the finest they had ever tasted'. The distillery has its own peat banks and floor makings, and blends 20 per cent of its own peated malt with imported, unpeated malt to achieve around 20ppm phenols.

 The washbacks here were used as bath-tubs for the troops stationed on Orkney during the Second World War. It has two pairs of stills, unusually, all of the same size. Bottled by its owner at 12 Years, with occasional vintage' bottlings, Highland Park is now one of the world's top selling single malts.

 HIGHLAND PARK WHISKY  Tasting Notes

Prop @ 12 Years: Mid gold in colour, the unreduced aroma is heathery, with smoky undertones; when water is added it becomes more honied, with some leafy, spicy notes. The flavour is a delicate balance of sweet and dry, with a smoky catch' in the finish - this is the malt's signature.

 

Adelphi @ 24 Years (55.9%): The colour of melted butter, with an aroma of orange liqueur and a trace of almonds. With water the nose opened into syrup sponge and beeswax. The flavour started sweet and finished dry and smoky, with honey-comb and salt.
